Protein percent in Food for Dog who had Acute Pancreatitis

Dear Dr. Brown,
My dog Panda had acute pancreatitis one year ago. Since then, he’s been on a weight management food and exercises and he’s lost weight and doing great. However, Panda seems to have developed an allergy to his food (he’s started chewing his right front leg last November–we have not had any changes to our home that would have resulted in behavioral chewing).
I do know that the company (Caston & Pollux Organix) has changed the food ingredients. So I want to change his food to a grain free.
The foods I’ve been researching have a higher protein level than what Panda is on now. His current food is 10% crude fat with 21.5% crude protein. The new food would be 10% crude fat with 30% crude protein. (The new brand is Blue Buffalo Wilderness Weight Management.)
My question is–Is it OK for Panda to be on a higher protein food? I don’t want him to gain the weight back that he’s lost. But I wonder if being on a higher protein food would also mean that he wouldn’t be as hungry as he seems to be now.
Is the fat content the only thing that I have to be concerned about (since he’s had the pancreatitis)? Do I have to worry about protein percentages with a dog who had acute pancreatitis?
I did find another weight control food (it’s called NOW grain free weight control/senior). It is about 10% crude fat & 24% crude protein.
By the way, Panda is a rescued former shelter dog, a Shih Tzu, probably around 8-9 years old.
I want him to be on the best food possible so he doesn’t have a recurrence. I’d sooner be on a diet of ramen noodles and dry toast than to deny him the best food.
