A real “scaredy” cat

Dear Dr. Gaylord,
About a month ago, I adopted a 3-year-old Calico cat. She was an outdoor cat that had a lot of human contact. She is very smart. No problems eating, drinking or using the liter box. She loves to play with cat toys. Her absolute favorite game is when we play with the bird feather on the rod.
The issue is that she is a real “scaredy” cat. Any sudden movement, she runs and hides under my bed. She kneads everything. She rubs up to my hand but when I go to pet her, she backs off a little. She doesn’t let me pick her up. But when I manage to get her, she settles down. She will then run when I put her down.
Is she still just getting used to her new living arrangement? What can I do to help her settle in?
